• Preheat oven 350°F.
  • Preheat a large skillet over medium-high heat. Brown the sausage meat until fully cooked and set aside to cool.
  • In a large mixing bowl, add the ricotta cheese, thyme, parsley, chili flakes, ½ cup parmesan cheese, salt, pepper and mix well.
  • Fold the sausage into the cheese mixture. Pour mixture into an oven-safe baking dish, sprinkle with the remaining parmesan cheese and drizzle with olive oil.
  • Bake for about 30 minutes or until golden brown and bubbly. Allow to rest for about 10 minutes.  Serve with crusty bread or crackers and onion relish.
