• Heat oven to 350°F.
  • Add all ingredients, except jam, to mixing bowl and mix until incorporated well. Line a 9x13 nonstick pan with parchment paper. Press half of the batter into the pan and bake for 10 – 12 minutes.
  • Remove from oven and gently spread jam over crust. Gently and evenly drape remainder of batter over the layer of jam. Be careful not to break the partially cooked bottom layer.
  • Cook in the oven for another 20-25 minutes or until toothpick comes out clean. Remove from pan using parchment paper and let cool for 25 minutes. Cut, sprinkle with powdered sugar and enjoy.
