Once all the dough has been scooped, let set in the refrigerator for an hour Bake for 8-10 minutes or until golden brown. Allow the cookies to cool. • To prepare the filling, beat together room temperature butter and confectioners sugar. Add peanut butter, cream, and vanilla and mix until well incorporated. Set aside. • Once the cookies have cooled, spread a dollop of filling onto the bottom of one cookie and top with another cookie to make a sandwich. Repeat until all have been used.
