• Lay two tortillas on the counter, sprinkle with the cheeses, chicken, diced tomatoes, green onions and top with the remaining tortillas.
  • In a skillet, heat one tablespoon of oil. Place the stacked tortillas in the hot skillet.
  • Cook for 2-3 mins on each side or until golden brown, and cheese has melted. Repeat.
  • Cut into wedges and serve with sour cream, salsa and or guacamole.
