• Pre-heat the grill or grill pan
  • Once hot, grill the corn and jalapenos until charred
  • Slice the jalapenos, and set aside
  • Remove the corn from the kernel, and set aside
  • Crumble the cotija cheese and set aside
  • Slice one-quarter of the red cabbage into thin slices and place in a medium-sized bowl. Add the vinegar, sugar, and mix well. Allow to pickle for at least one hour
  • You’re ready to build your tacos! Layer piles or black beans, corn, jalapenos, pickled cabbage, cotija cheese, drizzle with crema and top with lemon juice. Enjoy!
