Preheat oven to 350°. Grease 2 loaf pans and set aside.
In a large mixing bowl add eggs, oil, vanilla and sugar. Fold in the shredded zucchini.
Mix in flour, salt, baking powder, baking soda and cinnamon. After all is combined gently fold in the blueberries.
Divide the batter between the two baking pans. Bake for 50- 60 minutes. Or until a knife inserted in the center of the loaf comes out clean. Cool completely in pan.
