Bruschetta
Olives bring additional flavor and contrast to this recipe. This tomato mixture is great for entertaining, mix up a batch for your next tapas night!
What you need
- Quarter the tomatoes, remove seeds, dice and put into a mixing bowl
- Finely chop your onion and add to mixing bowl
- Add the sliced black olives, red wine vinegar, and sugar to the tomato mixture
- Gently stir the ingredients
- Chill the mixture for an hour before serving
- Slice your French bread and place on a serving plate
- Spoon the mixed ingredients, covering each sliced piece of bread
- Sprinkle with parsley
