Plantain Lasagna

What you need
- Pre-heat oven to 350°F.
- Dice your onion and garlic.
- In a sauce pan, brown meat on medium high heat. While browning, season with salt and pepper.
- Once browned, remove from pan and set aside. In the same pot, cook onions for about 3 minutes. Add garlic and cook for another minute. Add tomato sauce, sugar, cumin, thyme, oregano, and season with salt and pepper. Add back browned meat. Let simmer for about 30 minutes.
- Peel the plantain and cut in half. Slice, lengthwise, into ¼ inch thick slices. Shallow pan fry the plantain, in oil, for about two minutes on each side. Set aside on a paper towel.
